Fresh Tautog with Parsley Egg Noodles

My friend from work is a great fisherman, and one day he brought in some of the fresh fish he had just caught. I put a lot of thought into how to prepare this fish. I finally decided on a breadcrumb topping with a lemon caper herb sauce to spread on top. It was perfect, full of flavor yet it did not hide the fresh taste of the fish.

Ingredients: Homemade breadcrumbs (made from Terra Nova bread), saute olive oil, capers, salt and pepper. Once cooled down, add in the chives and dill. I have found that overcooking dill and chives ruins their true flavors. Then drizzle in some lemon. Bake fish in a pan with breadcrumb topping spread on top.
