Bronzini with Roasted Baby Potatoes and Avocado

When preparing this meal, I wanted to make sure I kept the toppings light so I did not hide the amazing taste of fresh Bronzini. If you are looking for a light, refreshing, and nourishing meal, this right here is it!! When making this, the real challenge is finding the fresh fish. I bought this fish from Wegman’s, and it tasted like it came off the boat in Greece yesterday!

Ingredients: Farm raised Bronzini imported from Greece, drizzle fish with extra virgin olive oil, sprinkle salt, pepper. Mix Anaheim pepper, EVOO, fresh garlic, and herbs de Provence in a small bowl. Spread on top of fish. Pull up the edges of the aluminum foil to make side walls when cooking the fish. Organic baby potatoes coated with canola oil/salt/pepper. Organic avocado
