Chicken Pot Pie

Two day process. Made from scratch. A lot of work, but totally worth it!

Ingredients of Pie Crust: 3 cups of organic whole wheat pastry flour, 1 stick of unsalted Kate’s of Maine butter cut into the flour until all pieces are about the size of peas, 2 teaspoons of salt, 1 stick of unsalted Kate’s of Maine butter (flatten all pieces), about 1/3 cup of cold water, fold and form the dough on a piece of parchment paper. Wrap and chill dough overnight.

Ingredients of roasted chicken: 1 Organic whole chicken (stuffed with yellow onion, thyme, lemon wedges, garlic) coat the skin and meat underneath the skin with salt, pepper, paprika, olive oil, and a little cayenne pepper. Make home made chicken broth with all leftover bones and stuffing.

Ingredients of Filling: 1 organic celery stalk, 1 bunch of organic carrots, 1 container of white mushrooms, many sprigs of thyme, homemade chicken broth, garlic, yukon gold potatoes (pre boil these), a little flour, salt, pepper, organic english peas, fresh chicken meat, a little creme fraiche.
