This was the super delicious meal that I made for the Super Bowl. It was hard work, but certainly worth it in the end. I started at 1 PM and worked nonstop until 5:30 PM. Only water breaks were taken! Believe it or not, I think it is very important to stay hydrated when cooking. It can be a workout!
Ingredients: Grilled pork loin marinated in oilive oil, salt, pepper, and a little white wine vinegar. Cook well done and the last few minutes spread some BBQ sauce on. Place in a bowl, shred the pork up and then add more BBQ sauce.
Cole Slaw: Red cabbage, green cabbage, organic carrots, sour cream, organic dijon mustard, lime, organic cilantro, organic cane sugar, scallions, salt, pepper.
Mango Salsa: Slightly hard mangoes (very important!), lime, cilantro, a little salt and pepper.
Red Salsa: Roma tomatoes, saute white onion, garlic, and olive oil, apple cider vinegar, cilantro, cubanelle pepper, extra virgin olive oil, salt, pepper
