Blueberry Lemon Poppy Seed Pancakes

I wanted to kick off the first day of 2020 with a happy belly!!! This breakfast was inspired by my craving for a lemon poppy muffin. I also love having blueberries in the morning so I morphed this muffin craving into a blueberry lemon poppy seed pancake. Also, they are mostly dairy free! The only dairy is the butter I like to put on top of my pancakes.

Ingredients: Catskill Provisions Organic pancake mix, So Delicious almond milk, vanilla extract, poppy seeds, Meyer lemon juice, organic blueberries, organic eggs.

Toppings: Macadamia nuts, walnuts, pure NY maple syrup, Kate’s salted butter.
