Okie dokie artichokie! From the very first bite of this meal, I knew I had to blog about it. I love Arborio rice, a species of rice that is great for risotto. I buy the brand of Arborio rice which is cultivated and packaged in the Po River Valley in Italy. I also love artichokes.
