What I am most proud about this dish was how my homemade pasta turned out. I have attempted homemade pasta before, but it turned out leathery. Ingredients for fresh pasta: 2 eggs and started off with 1.5 cup flour mixture (mostly Tipo 00 flour, all purpose flour, and a little semolina flour). Mixed this in a bowl and added additional flour little by little until I got a good consistency.
Ingredients for lasagna: Eggplant (sliced and oven roasted with olive oil), fresh artichokes (baked in tin foil), ricotta, fresh mozzarella, curly parsley, fresh garlic cooked low and slow in olive oil/ oregano/salt/parmesan cheese, can of San Marzano tomatoes, fresh sliced tomatoes.
