White Bean & Escarole Soup

This was one of the best soups I have ever had/made! So delicious and nourishing; and the perfect meal on a cold day!

Ingredients: Homemade vegetable broth (shallots, carrots, onions, garlic, celery, bay leaf, salt, pepper, parsley, olive oil, splash of red wine vinegar at end). Cannellini beans, escarole, in a deep pot, sauté the garlic in olive oil until golden, remove from oil, add in a few homemade meatballs in freezer from a previous time). Add in escarole, cook it until slightly wilted, then add in beans and vegetable broth.
