Delicata Squash Ravioli with Honey Pistachios and Balsamic Drizzle

Filling:

  • Delicata squash and honeynut squash (roast the seeds!) (coat with sunflower oil and nutmeg and roast in oven until soft)
  • shallot, garlic, sage (saute in pan with olive oil)
  • 1 tablespoon of whole milk (just enough to blend up the mixture)
  • sea salt
  • manchego cheese
  • romano cheese
  • nutmeg

Pasta: 2 eggs, 1 cup of mostly 00 flour, some all purpose flour, and semolina flour

Toss ravioli in a butter/sage sauce and then lay on top of a light balsamic drizzle. Mix raw pistacios with honey, sprinkle roasted seeds on top.
