A few weeks ago I went to an Egyptian festival. It was here that I first heard of chicken shawarma. After a little research online, I created my own shawarma inspired marinade for chicken breasts. Ingredients: In a food processor, blend together, red onion, jalapeno pepper, fresh garlic, olive oil, canola oil, paprika, ground coriander, cinnamon, ground turmeric, salt, a few tablespoons of greek yogurt, fresh squeezed lemon juice, in a pestle (grind up fresh cardamom seeds, peppercorns, and cumin). Marinade for 24 hours, then cook on a grill. For the vegetables, slice up red onion, curly parsley, red onion, orange onion, green onion, garlic, salt, a little canola oil, and red wine vinegar (best quality). Sauté on high heat. Bring everything together with some short grain brown rice. I love the taste texture, and chewiness of this rice!
