Tortilla Crusted Snapper with Coconut/Cilantro/Baby Banana Rice

My plating could be better. But more importantly, the flavors and freshness of this dish were incredible!

Ingredients: Frozen snapper fillets from Wegmans, tortilla crust topping(tortilla chips, fresh Jalapeño pepper, a little shallot, a little garlic, cilantro, sear in pan with Canola oil. For the Basmati rice (cook rice in water, add in coconut oil, a little sugar, cilantro, salt, pureed baby banana)
