Vegetable Risotto with Garden Herb Seared Shrimp

Ingredients for Risotto: Yellow onion, Arborio rice, Pino Grigio wine, shallots, extra virgin olive oil, fresh minced garlic, vegetable broth, chicken bone broth, fresh cherry tomatoes, asparagus, zucchini, salt, fontina cheese, parsley, a few Thai basil leaves

Ingredients for shrimp: Marinade shrimp for at least a few hours in extra virgin olive oil, fresh minced garlic, rosemary, oregano, savory sprigs, champagne wine vinegar, parsley, minced shallot, and salt only right before searing.

Top dish with crispy prochiutto.
