Spinach Calzones

When you play golf on a sunny Friday evening, a spinach calzone is the perfect way to end the day. I was happy to bite into this hot pocket of tastiness with my dad and cousin. It came out so good, that I had to document it (despite the crappy photo!) I promise, this tasted 100x better than it looks.

Ingredients for tomato sauce: Extra virgin olive oil, shallots, garlic, crushed red pepper flakes, fresh oregano, san Marzano tomatoes (from my garden), can can of peeled san Marzano tomatoes (Mutti brand), a few fresh basil leaves, salt

Spinach filling ingredients: About 6 bunches of fresh spinach (enough for two doughs), steam the spinach and squeeze the liquid out, white onion, garlic soaked in lemon, salt, black pepper, feta cheese, fresh mozzarella, grated cheese (parmesan reggiano/romano.
